A summery dish: Peachy Pork Chops

This is an easy summery dish that my husband and I and my children enjoy.   (Not any easy accomplishment in my house)!  The fruity flavor appeals to the kids, and the spices add an interesting flavor that is subtle enough to sneak by the kids, but tasty enough to appeal to a more adult palate.

 

Preparation Time: 5 minutes to assemble

1-2 hours to marinate

20 minutes to cook

 

Peachy Pork Chops

 

4 boneless pork chops

1 can peaches in juice or light syrup

¼ cup soy sauce

3 Tbs. brown sugar

1 Tbs. Dijon mustard

¼  tsp. ground cardamom

½ tsp. minced fresh ginger

2 Tbs. vegetable oil

Salt & pepper to taste

 

 

Drain peaches and chop into 1” pieces.   Don’t discard the syrup.

Mix half of the peach syrup, soy sauce, brown sugar, mustard, cardamom and ginger.

Gently stir in the peaches.

Marinate pork in above mixture in refrigerator for 1-2 hours.

Heat oil in a heavy skillet on medium-high heat.

Remove pork chops from marinade, and sautee 4-5 minutes on each side, until lightly browned.

Add marinade to skillet and bring to boil.

Reduce heat and let simmer for 5-10 minutes over low heat, until sauce begins to thicken.

Add salt and pepper to taste.

Serve with brown rice and steamed green beans.
