Chicken Ginger Soup with Couscous

Chicken soup is known as the remedy for colds and flu in many cultures around the world.   Chicken soup gives a positive feeling of comfort to children especially when served to them by Mom.    Tired of your old recipe?   Try this Asian-inspired chicken soup recipe for a change.   It’s easy to prepare, appetizing and nutritious.  Bon appetit!

Chicken ginger soup with couscous

1 small green papaya (or 1 zucchini), sliced
1 bundle of Spinach
4 pcs. garlic cloves
1 tablespoon minced ginger
1 medium size onion
2 medium size chicken breasts, chopped
2 medium size diced potatoes
2 chicken bouillon cubes
3 tablespoons of extra virgin olive oil
1 liter of water
salt and pepper
organic couscous

Soup
1.  Heat oil in a sauce pan over medium heat.  Saute the onions until slightly brown.
2.  Add garlic and ginger.  Saute for approximately 1 minute.
3.  Mix the chicken breasts and cover for 2-3 minutes.  Transfer to a medium size casserole.
4.  Add water, potatoes and papaya.  Allow to boil for 15-25 minutes or until tender.
5.  Add chicken bouillon cubes, spinach, salt and a dash of pepper.

Couscous
6.  Put 5 tablespoons of couscous grain in a microwave-safe dish.
7.  Pour about 1 cup of soup (or more) above.  Cover with plastic wrap and microwave for 1-2 mins.
8.  The couscous is now cooked.  Add a generous amount of soup into the bowl,  chicken and vegetables.  Serve hot.
