Chicken Soup a la Minestrone

You need:
2 medium size celery sticks
2 medium size carrots, peeled and cut into strips
1 large size potato cubed
1 can cannellini beans (the dried ones require more cooking time)
1 cup shredded cabbage
2 beef bouillon cubes
2-3 strips of bacon, chopped
2 cups of chicken breasts, sliced into bite size pieces
3 small tomatoes, chopped
1/2 cup chopped fresh parsley
salt and ground pepper
1 liter of water
Olive oil

Method of preparation:
1.   Pour an appropriate amount of olive oil in a large sauce pan over high heat.
2.   Saute garlic and chicken. Then add bacon, carrots, potato, and celery together.
3.   Add beef bouillon cubes, cannellini beans, tomatoes, cabbage and water.  Bring to a boil.
4.   When the chicken is well cooked, add fresh parsley.
5.    Season with salt and pepper.  Serve hot.
