Baked Potato, Spinach and Ham

500 g of spinach

400 gr potatoes

100 g prosciutto

4 eggs

80 g butter

100 gr of grated Parmesan cheese,

1 tablespoon flour

fresh cream, nutmeg and salt.

How to prepare
1. Boil and mash the potatoes.
2. Add 2 eggs, melted butter, parmesan and nutmeg.  Mix well and set aside.
3. In a pan, melt the rest of the butter and saute the spinach.
4. Next, add the cream, flour and cook for a minute.
5. Add the remaining  2 beaten eggs.  Mix in #2
6.  Transfer to a greased round baking dish and put in the oven.  Bake at 180° c for 30 minutes.
7.   Top with prosciutto and presto!  Serves four.
