Quiche for the picky eater

Meal dilemmas?

To be honest, my children have a love and hate relationship with broccoli. At times, they won’t eat it but  occasionally  they would.

Here’s a fantastic recipe that guarantees no mealtime battles with the kids. This will make even the most picky eater eat it.  Just one condition – they have to like cheese.

Preparation time: 30minutes
Cooking time: 30 minutes

Ingredients: (serves 5)
250 g fresh broccoli
4 eggs
2 tablespoons fresh cream
3 tablespoons shredded mozarella cheese
1 tablespoon chopped basil
125 g gorgonzola cheese
pepper
nutmeg
150 g grated parmesan cheese
rocket lettuce

Pastry
250 g all purpose flour and some for dusting
butter
100 ml cold water

Preparation

1. Cook the broccoli.
2. Make the pastry by combining the flour and butter in a bowl. Mix well with your fingertips. Do not use a mixer. Then add water little by little (add more as necessary) to blend everything together. Roll into a ball and set aside.
3. Roll out the dough in a baking dish.
4. In a bowl, mix together the eggs, cream and cheese. Crush gorgonzola cheese with a fork.
Put a dash of salt and pepper as desired salt and then add the basil.
5. Arrange the cooked broccoli on the pastry and pour the mix on it. Sprinkle with nutmeg and cover with cheese. Put in a preheated hot oven 25-30 minutes at 200 ° C. Serve with rocket lettuce or the salad of your choice.
