MEDITERRANEAN style grilled lamb chops

May is the month of leisure walks and outdoor fun. What better way to bask in the goodness of the season than to invite friends over for a barbecue before the arrival of the rainy season?

Hosting a barbecue is the easiest way of entertaining friends and can be put together at a few moments’ notice.

Barbecue is mostly a meat-heavy feast. For those who want to stay away from the cloying effect of thick rich marinade, here’s a light recipe that brings out the natural goodness of lamb chops your guests will appreciate.

Ingredients (serves 6)
18 pcs. of lamb chops
5 tbsp extra virgin olive oil

Marinade
6 tsp. minced fresh coriander
6 tbsp honey
3 tbsp extra virgin olive oil
6 tsp cumin powder
3 tsp mixed spice
1 ½ tsp sweet paprika powder
fresh mint
rock salt

1. Thaw lamb chops if you bought them frozen.
2. Mix all the marinade ingredients in a deep bowl.
3. Brush the marinade all over the lamb chops.
4. Transfer the meat in a deep plastic or glass container and pour the marinade mix into the meat. Prick the meat with fork. Cover with a plastic wrap and marinate in the fridge overnight.
5. Take it out from the fridge. Brush the marinade again before putting them on the barbecue grill.

Although best paired with mashed, or baked potatoes , hummus. will enhance the flavors even more. Happy cooking!
